  • Besan ki nimko, also known as besan sev, is a savory and crunchy Indian snack made primarily from chickpea flour (besan). It’s a popular snack enjoyed with tea or as a munching option during festivals and gatherings.
Patisa Barfi, also known as Soan Papdi or Soan Cake, is a popular Indian sweet known for its flaky and melt-in-your-mouth texture. Here’s a recipe to make Patisa Barfi at home: 

### Ingredients:

– 1 cup besan (gram flour)

– 1 cup sugar

– 1/2 cup ghee (clarified butter), melted

– 1/4 cup water

– 1/2 teaspoon cardamom powder

– 1/4 teaspoon baking soda

– Chopped nuts for garnish (optional)

 

### Instructions:

 

1. **Prepare the Sugar Syrup:**

– In a heavy-bottomed pan, combine sugar and water. Heat over medium heat until the sugar dissolves completely and the syrup reaches a one-string consistency. To check if the syrup is ready, take a small amount of syrup between your thumb and index finger; it should form a single thread when pulled apart.

 

2. **Prepare the Besan Mixture:**

– In a separate pan, heat ghee over low-medium heat. Add besan and roast it on low heat, stirring continuously, until it turns golden brown and aromatic. This will take about 10-12 minutes.

 

3. **Combine Ingredients:**

– Once the besan is roasted, add the baking soda and mix well. Be careful as it will bubble up.

– Gradually pour the hot sugar syrup into the roasted besan mixture, stirring continuously to avoid lumps.

 

4. **Mix Thoroughly:**

– Keep stirring the mixture over low heat until it starts to leave the sides of the pan and forms a thick, semi-solid mass. This may take around 5-7 minutes.

 

5. **Add Flavoring:**

– Add cardamom powder and mix well. Optionally, you can also add chopped nuts like almonds or pistachios at this stage for added texture and flavor.

 

6. **Shape the Barfi:**

– Grease a plate or tray with a little ghee. Transfer the mixture onto the greased plate and spread it evenly using a greased spatula or the back of a spoon. You can also use a rolling pin to flatten it evenly.

 

7. **Garnish:**

– While the mixture is still warm, sprinkle chopped nuts on top and gently press them down with the back of a spoon.

 

8. **Let it Cool:**

– Allow the Patisa Barfi to cool completely at room temperature. Once cooled, cut it into square or diamond shapes using a sharp knife.

 

9. **Serve:**

– Serve the Patisa Barfi as a delightful sweet treat or store in an airtight container at room temperature. It stays fresh for several days.
